AD Chardonnay
Wine
del Rios AD Chardonnay draws from the winery's Mount Anakie vineyard. The reserve label, it is produced in small quantities and released only in select years.
Most of the fruit is basket pressed while the remainder is air bag pressed. The juice is transferred to a mix of new and seasoned barrels for wild yeast fermentation. The new barrels also complete malolactic fermentation.
The wine spends 10 months in French oak on generous fine lees, stirred only as required. The best barrels are selected for the final blend.
Light yellow, del Rios AD Chardonnay is full bodied with balanced fruit flavours, acidity and oak. Cellaring potential is five years.
